  5. Next, use a spatula to gently fold in the oats.
  6. To make the cookies into a ball shape like mine, when the mixture has cooled enough to touch, you can use your hands to roll the mixture into evenly sized balls (about an inch and a half inches in diameter). Place them on the baking sheet and allow them to cool in the fridge for one hour.
  7. For the flatter cookies, after mixing in the oats and chocolate, use a cookie scoop or large spoon to drop spoonfuls of the cookie mixture onto the prepared baking sheet right away. The mixture sets fast, so work efficiently.
